Baking English | Nim's Kitchen
Prices are going up on everything, especially at the grocery store. I figured it was time to start baking my own breads on a regular basis. This is good for us for a couple of reasons:
I control the ingredients
It’s cheaper than buying highly processed food items which aren’t good for you anyway.
The first thing I started with is an English Muffin recipe from King Arthur Baking. I make and freeze breakfast sandwiches for the hubby and Three. I’m hoping to be able to make several batches at a time so I can freeze them

This recipe was easier than I expected even if working with the dough was a bit fiddly. It’s a sticky dough and I worked with it from the bowl. Next time I’ll turn it out onto a silicon mat and cut the dough into pieces. I got a dozen muffins out of the recipe. It says it makes 16 and it might. I didn’t weigh each muffin when I formed them.

The only other part of making English muffins that could be tricky is the temperature of the griddle. I managed fine with it and found that the muffins cooked perfectly at 7 minutes per side as the recipe suggested. By 7 minutes on the second side, they hit 200” in the center and hadn’t burned. The farina a.k.a. Cream of Wheat did its job. Considering how thick I coated the griddle it was sure to work.
Handling the dough will get easier as I get more comfortable with the recipe. That means making a lot of muffins. Since this recipe is easy to mix up and didn’t take a lot of time I’ll be using it again. The King Arthur site has several recipes for English Muffins. I chose this one because it appeared to be the easiest and I had everything on hand in my kitchen.
I have to make breakfast sandwiches with them now so the taste test has yet to happen. Today was a busy day since we’re getting ready to have a new roof and gutters installed in a few days.
Off to enjoy the afternoon in the pool now. It’s the best way to unwind and relax on these hot summer days.
