Victory Monday and Brisket
Down by 24 at the end of the 1st quarter. It was a punch to the gut. But then the Chiefs did what we've seen them do so many times this season. The offense exploded! Seven touchdowns in seven consecutive drives. We were screaming like maniacs as the defense not only stepped up they dominated to shut the Texans down. All of 7 of the 31 points that the Texans scored were against the special teams unit or a mistake by our own offense. The game was the wildest thing I've watched in a very long time.
The season has been incredible to watch and next Sunday we'll face the Titans for the AFC championship game. The Titans are on fire right now and while I have complete faith in my Chiefs, this game will be a slug fest. Our defensive unit will have to stop Derrick Henry and if you've seen this man play you know that to date it's been impossible. The Titans ran the ball down Baltimore's throat all day long during their game on Saturday. My hope is that we have Chris Jones back on the line for the game.

We spent the better part of our day watching Good Morning Football which is hands down our favorite football show. While we watched though we both took turns applying mop sauce to our Victory Monday brisket. Chiefs win. We smoke a brisket. We bought this brisket at BJ's Wholesale club on our last trip.
Recently we switched from Costco to BJ's. We've switched between the two warehouse stores a few times in the last few years. This time I think we'll continue with BJ's because while they're a bulk shop like Costco they have a larger variety of grocery items. One of the things that made me happy was finding smaller briskets. Costco briskets - untrimmed Prime cut and trimmed Choice cut, a slightly larger.

Unfortunately for us the Traeger decided to quit firing during the smoke even though we cleaned it before started it up for this smoke. We'd put it into shutdown and transferred the brisket to the oven for the remainder of it's cook time. I’m glad the meat got 5 hours of smoke before we had to transfer it to the oven
There was a definite difference in the texture of the meat because it didn’t finish on the smoker. I guess I’m spoiled since purchasing a pellet smoker. Everything just tastes better. Like I said before, I’m glad it got the low smoke period complete but it needed to be cooked entirely on the Traeger. I’m just not a fan of oven brisket.
