Cards, Cornbread and Thoughts
We had plans to play Magic last night with my nephew and his wife, but his work schedule changed so we’re playing this afternoon. It’s my turn to cook and they enjoy my red beans and rice a lot, so I made a big pot of it early this morning. One of my favorite sides for this meal and chili is cornbread and lately I’ve been dressing it up with bacon and cheddar. This For time I took a shortcut and used 2 boxes of Jiffy cornbread mix. My Mom used Jiffy for as long as I can remember. The little blue and white boxes with the image of yellow cornbread muffins on the front stirs up memories of my childhood. I keep a couple boxes in my pantry for days when I don’t want to make cornbread from scratch.
The result was good but not as good as when I make it from scratch. This batch of muffins was drier. Lesson learned. I’ll stick with making them from scratch. When I was a working Mom, I loved shortcuts that helped me put meals on the table, but I have all the time in the world these days. Hallelujah for retirement! Cooking and baking from scratch has become an enjoyable part of my day and I’m thankful to have the time to pursue it. Through sites like King Arthur Baking and several BBQ sites I’ve learned so much and expanded my cooking, baking and BBQing skills. Ask my family, I smoke an incredible brisket.
I’m thankful I’m not a luddite and have embraced technology through the years. These days I try to limit my time depending on the digital world but again, that’s for another day and another post. Today is about these muffins and playing Magic the Gathering with my family. I’ve been playing my mono green stompy deck and my new mono white angel deck, both built by my wonderful husband. He’s been playing MtG since it released so many years ago. I really do need to jump into a deck with two elements to expand but I’m not sure what type of deck I want right now. There are a lot of “themes” to choose from and I’m having trouble committing to one.
The photo isn’t from today’s gaming session. this is from a couple weeks ago when my boys finally got some time in their schedules to sit down and play a few hands of Magic with us. It was a good afternoon. Playing games with my guys is always a hoot and I love when we can get together for gaming or BBQs that don’t revolve around holidays or birthdays.
Time to head out for an afternoon of cards.
