Marinated Cucumbers

The garden continues to amaze us. We made a lot of mistakes with our first attempt but we’re learning a lot! J and I have found several gardening channels on YouTube that we enjoy. We’re going to be even better at this next year!

There’s nothing better than marinated cucumbers especially when they’re from your own garden! This variety is different from what we’re used to eating. They definitely deliver the flavor. We got them from Burpee. These are Pick a Bushel Hybrid Cucumbers.

Marinated cucumbers are one of my hubby’s favorite summer sides. He also enjoys them as an anytime snack. They’re easy to make and take simple ingredients that most folks have in their kitchens.

Marinated Cucumbers

  • 2 - 3 medium cucumbers

  • 1/3 cup of white vinegar

  • 1/3 cup of water

  • 1/4 cup granulated sugar

  • salt and pepper to taste

Wash and dry cucumbers. Some folks like their cucumbers peeled. If you’re in that camp, then by all means, peel away. We like them with the skins. Slice each cucumber in half. Cut each half into thin slices. Toss them into a bowl and mix in the vinegar, water, sugar, salt and pepper. Stir gently until the sugar dissolves.

You can eat these right away but we like to let them sit in the fridge overnight before devouring them. Since cucumbers are a favorite, our 2024 garden will have double the plants and we’re going to add a pickling variety as well. Go big or go home right?
