Tuesdays and Pot Pie

Yes, yes, I know what you’re thinking…

Tuesday is for TACOS!!

Many Tuesdays in our home are definitely for tacos but today it’s all about Chicken Pot Pie! Last Saturday I made Chicken and Dumplings for dinner since it was game night at ours. Hand-rolled flat dumplings no less and freshly baked bread. I take my Hostess title seriously. I would have used Annie’s Flat Dumplings from the freezer aisle; but that little box is now $8! No thank you! Rolling dumplings is a bit more time consuming but SO much cheaper. Also, you control what goes into your dumplings.

But back to Pot Pie.

I was a little sad because I didn’t realize I was out of potatoes but it turned out great anyway!

it just needs a nice coating of half n half on the crust.

In all my years of cooking and baking, I have yet to make a pot pie that doesn’t leak a little. This time it only leaked onto the rim of the pie plate and not the baking sheet beneath it. I definitely need to make the crust larger when I use my Emile Henry pie dishes. All too often I forget that they’re 9-inch dishes. My Fall baking itch has started and I’ve got several recipes I want to try out after finding a new baking blog Bigger Bolder Baking. I just LOVE her and can’t wait to give her ‘no-knead” recipes a try!

But that’s all I have for today. I’ve been doing my semi-annual purge of closets and storage spaces in the house. Then there are several projects I’ve got in the works. There are always projects in the works but I’m dying to get back into my crafting zone.

And on that note, I’m off to get things done around here.
